Prep the fruit: Peel and chop the kiwis. Roll the lime on the counter with your palm to loosen the juices, then cut and squeeze it.
Blend the base: Add kiwi, lime juice, honey or syrup, and a small splash of water to a blender. Blend until very smooth.
Strain (optional but recommended): Pour the blended kiwi through a fine mesh strainer into a pitcher or measuring cup.
Use a spoon to press the liquid through. This removes seeds and pulp for a smoother sip.
Muddle the mint: In the bottom of a large glass or small pitcher, gently muddle the mint with a few drops of the kiwi mixture or lime juice. Press lightly to release oils without tearing the leaves.
Combine: Add ice to glasses.
Divide the strained kiwi-lime base among them. Top with chilled sparkling water and stir gently.
Taste and adjust: Add more sweetener if needed, a pinch of salt to enhance flavor, or more lime for brightness.
Garnish and serve: Add a mint sprig, a kiwi slice, or a lime wheel. Serve immediately while it’s still bubbly.
