Prep the melon: Cut the honeydew in half, scoop out the seeds, and remove the rind. Dice into chunks.
For best results, chill the melon beforehand.
Start the base: Add the melon cubes to a blender with lime juice, honey (or syrup), a handful of mint leaves, and a small pinch of salt.
Add liquid: Pour in 1/2 cup of cold water or coconut water to help everything blend smoothly.
Blend until smooth: Begin on low, then increase to high for 20–30 seconds. Taste and adjust sweetness or lime as needed.
Add ice: Toss in 1–2 cups of ice and blend again until you get a slushy, pourable consistency.
Strain (optional): For an ultra-smooth drink, strain through a fine mesh sieve. This step is optional; many people enjoy the natural pulp.
Serve: Pour into chilled glasses.
Garnish with a sprig of mint, a thin lime wheel, or a small melon wedge.
Make it sparkling (optional): Fill glasses halfway with the cooler, then top with cold sparkling water for a light, fizzy finish.
