Prep the produce. Halve the cherry tomatoes. Slice the avocado and gently fan it or cube it.
Roughly chop the herbs. Set everything aside.
Dry the halloumi. Pat the halloumi slices with a paper towel. Moisture prevents browning, so get it as dry as you can.
Warm the pan. Set a nonstick or cast-iron skillet over medium to medium-high heat. Add 1 teaspoon olive oil and swirl to coat.
Sear the halloumi. Lay the slices in a single layer.
Cook 2–3 minutes per side until deeply golden with crisp edges. Don’t move them too much; let the crust form.
Make a quick lemon drizzle. In a small bowl, combine 1–2 teaspoons olive oil, the juice of half a lemon, a pinch of salt, and black pepper. Whisk to emulsify.
Add a little zest for extra brightness.
Optional eggs. If using eggs, cook them now. A jammy soft-boil, poach, or sunny-side-up works well. Season with salt and pepper.
Assemble the plate. Add a handful of greens to each plate.
Top with avocado, cherry tomatoes, and the seared halloumi. Drizzle the lemon dressing over everything.
Finish with flair. Sprinkle with chopped herbs, a pinch of red pepper flakes, and toasted seeds or nuts for crunch. Add toast or warm pita on the side, if you like.
Taste and adjust. Add another squeeze of lemon, a drizzle of olive oil, or a turn of pepper to balance the flavors to your liking.
