Cucumber Mint Cooler - A Bright, Refreshing Drink for Any Day

Ingredients
  

  • 1 large English cucumber (or 2 smaller cucumbers), plus a few slices for garnish
  • 1 packed cup fresh mint leaves, stems removed, plus extra sprigs for garnish
  • 2–3 limes (about 1/3 cup fresh lime juice)
  • 2–3 tablespoons honey or simple syrup (adjust to taste; maple or agave work too)
  • 2 cups cold water (still or sparkling)
  • Ice, for serving
  • Pinch of salt (optional, to brighten flavor)

Method
 

  1. Prep the produce. Wash the cucumber and mint. Roughly chop the cucumber into chunks. Juice the limes and set aside. Remove tough mint stems so the flavor stays fresh, not bitter.
  2. Blend the base. Add cucumber chunks, mint leaves, lime juice, honey (or syrup), and 1 cup of cold water to a blender. Blend on high until very smooth and bright green, about 30–45 seconds.
  3. Taste and adjust. Sip a spoonful. If it needs more zing, add a splash of lime. If it’s a little sharp, add another teaspoon of honey. A tiny pinch of salt can sharpen the flavors.
  4. Strain for a smooth sip. Pour the mixture through a fine-mesh strainer or nut milk bag into a pitcher. Press gently to extract the liquid without forcing too much pulp through. This keeps the drink silky and refreshing.
  5. Top it off. Stir in the remaining 1 cup of cold water. If you like bubbles, use sparkling water here. If you prefer a stronger flavor, add less water and serve over more ice.
  6. Chill and serve. Fill glasses with ice. Pour the cooler over the ice and garnish with cucumber slices and a mint sprig. Serve immediately for the crispest taste.
