Ingredients

  • Whole milk: 2 cups, for a creamy base. You can swap with 2% or a rich non-dairy milk.
  • Heavy cream: 1/2 cup, for extra silkiness. Optional but recommended.
  • Semi-sweet chocolate: 4 ounces, chopped, or high-quality chips. Dark chocolate works too.
  • Unsweetened cocoa powder: 2 tablespoons, for a deeper chocolate backbone.
  • Granulated sugar: 1–2 tablespoons, to taste. Adjust based on your chocolate.
  • Vanilla extract: 1/2 teaspoon, for a warm, rounded flavor.
  • Pinch of salt: Just a little to make the chocolate pop.
  • Baileys Irish Cream: 2–4 ounces, depending on how boozy you like it.
  • Optional toppings: Whipped cream, chocolate shavings, cocoa dusting, or a cinnamon stick.

Method

  1. Warm the dairy: Add milk and cream to a medium saucepan. Heat over medium-low until steaming, not boiling. Stir occasionally to prevent a skin from forming.
  2. Whisk in cocoa and sugar: Sift in the cocoa powder to avoid lumps. Add sugar and a pinch of salt. Whisk until fully dissolved and smooth.
  3. Melt the chocolate: Add chopped semi-sweet chocolate. Stir gently until it melts completely and the mixture is glossy and uniform.
  4. Add vanilla: Stir in the vanilla extract. Taste and adjust sweetness if needed.
  5. Remove from heat and spike: Take the pan off the burner. Stir in Baileys. Start with 2 ounces, taste, and add more if you want a stronger flavor.
  6. Serve right away: Pour into warm mugs. Top with whipped cream, a light cocoa dusting, or chocolate shavings for a little flair.
