Make the simple syrup (if needed): Combine equal parts sugar and water in a small saucepan. Warm over low heat, stirring until the sugar dissolves. Let it cool completely.
You can also add a few strips of lime zest while it cools for extra citrus aroma.
Muddle the cherries: Add the pitted cherries to a mixing bowl or pitcher. Use a muddler or the back of a spoon to crush them until they release their juices. If you prefer a smoother drink, strain the mixture through a fine sieve to remove skins and pulp.
If you like texture, leave it as is.
Juice the limes: Roll limes on the counter to loosen them, then cut and juice. Aim for about 1/2 to 3/4 cup of fresh lime juice, depending on how tart you like your drink.
Build the base: In a large pitcher, combine the muddled cherries (or cherry juice), lime juice, and 1/3 to 1/2 cup simple syrup. Stir well.
Taste and adjust sweetness—remember the sparkling water will dilute it slightly.
Chill: Refrigerate the base for at least 20 minutes to let the flavors settle and cool down. Cold ingredients keep your ice from melting too fast.
Prepare the glasses: Optional but fun—rim each glass with lime and dip the edge into a small plate of sugar for a sweet sparkle. Add crushed ice to each glass.
Finish with fizz: Fill each glass halfway to three-quarters with the cherry-lime base.
Top with sparkling water or club soda. Stir gently to combine without losing too much carbonation.
Garnish and serve: Add a lime wheel, a sprig of mint, and a cherry on top. Serve immediately while it’s icy and bubbly.
