Ingredients:
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 cup dried green or brown lentils, rinsed and drained
- 1 can (28 oz) crushed tomatoes
- 6 cups vegetable broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional, for a slight kick)
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 6 lasagna noodles, broken into pieces
- 1 cup baby spinach or kale, chopped
For Garnish:
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese
- Fresh basil leaves (optional)
Instructions:
Sauté the Aromatics:
- Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion, garlic, carrots, and celery. Sauté for 5-7 minutes until vegetables are soft and fragrant.
Add Lentils and Seasonings:
- Stir in the lentils, basil, oregano, red pepper flakes, salt, and black pepper. Mix well to coat the lentils with spices.
Incorporate Tomatoes and Broth:
- Pour in the crushed tomatoes and vegetable broth. Stir to combine. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 20-25 minutes, or until the lentils are tender.
Cook the Lasagna Noodles:
- Add the broken lasagna noodles to the pot. Simmer for an additional 8-10 minutes, stirring occasionally to prevent sticking, until the noodles are cooked al dente.
Add Greens:
- Stir in the baby spinach or kale. Cook for 2-3 minutes until wilted.
Serve and Garnish:
- Ladle the soup into bowls. Top each serving with a dollop of ricotta cheese, a sprinkle of mozzarella and Parmesan, and fresh basil leaves if desired.
Tips:
- Use ground turkey, chicken, or pork for variation.
- For added texture, use thinly sliced keto-friendly tortillas or cut-up low-carb wraps as “noodles.”
