This version of Marry Me Chicken features a touch of smoky paprika, sun-dried tomato pesto, and creamy goat cheese for a unique twist on the classic recipe.


Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 tablespoons sun-dried tomato pesto
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup goat cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon fresh thyme leaves (plus extra for garnish)
  • 1 teaspoon red chili flakes (optional, for a hint of spice)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken:
    • Season the chicken breasts with smoked paprika, garlic powder, salt, and pepper on both sides.
  2. Sear the Chicken:
    • Heat olive oil in a large skillet over medium heat. Sear the chicken for 4–5 minutes on each side, until golden brown. Remove from the skillet and set aside (chicken will finish cooking later).
  3. Make the Sauce Base:
    • In the same skillet, add minced garlic and shallots. Sauté for 1–2 minutes until fragrant and soft.
  4. Add the Flavor Boost:
    • Stir in the sun-dried tomatoes and sun-dried tomato pesto. Cook for another 1–2 minutes to deepen the flavor.

    • Pour in chicken broth and stir, scraping any browned bits from the bottom of the skillet. Let it simmer for 2–3 minutes to reduce slightly.

    • Return the chicken breasts to the skillet, spooning the sauce over the top. Cover and let the chicken cook through, about 10–12 minutes, depending on thickness.
