This version of Marry Me Chicken features a touch of smoky paprika, sun-dried tomato pesto, and creamy goat cheese for a unique twist on the classic recipe.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small shallot, finely chopped
- 1/3 cup sun-dried tomatoes, chopped
- 2 tablespoons sun-dried tomato pesto
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup goat cheese, crumbled
- 1/4 cup grated Parmesan cheese
- 1 teaspoon fresh thyme leaves (plus extra for garnish)
- 1 teaspoon red chili flakes (optional, for a hint of spice)
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Chicken:
- Season the chicken breasts with smoked paprika, garlic powder, salt, and pepper on both sides.
- Sear the Chicken:
- Heat olive oil in a large skillet over medium heat. Sear the chicken for 4–5 minutes on each side, until golden brown. Remove from the skillet and set aside (chicken will finish cooking later).
- Make the Sauce Base:
- In the same skillet, add minced garlic and shallots. Sauté for 1–2 minutes until fragrant and soft.
- Add the Flavor Boost:
- Stir in the sun-dried tomatoes and sun-dried tomato pesto. Cook for another 1–2 minutes to deepen the flavor.
- Build the Creamy Sauce:
- Pour in chicken broth and stir, scraping any browned bits from the bottom of the skillet. Let it simmer for 2–3 minutes to reduce slightly.
- Lower the heat and stir in the heavy cream, goat cheese, Parmesan cheese, thyme, and red chili flakes (if using). Simmer until the sauce becomes creamy and smooth.
- Finish the Chicken:
- Return the chicken breasts to the skillet, spooning the sauce over the top. Cover and let the chicken cook through, about 10–12 minutes, depending on thickness.
